Crockpot Tater Tot Casserole
I attended an event recently and needed a simple, vegetarian crockpot meal. I looked at a lot of different versions, but in the end didn't like any of them. So I made my own up. It turned out super tasty, and people asked for the recipe so here it is more or less. The times are slightly made up, and I would suggest going with your own experience of your crockpot. Also this version would be good in the oven or skillet instead of a crockpot since the tater tots would brown more.

64 oz frozen tater tots
32 oz shredded cheddar cheese
16-24 oz canned black bean, drained
16 oz sour cream
Put 2-3 sets of layers of sour cream, tater tots, black beans and cheddar cheese. Heat on high for 1-2 hours until heated through and cheese is melted, then it can be turned down to low until served. (Alternatively it can be heated on low for 3-4 hours.)
