Stuffed Cabbage
So many of you are aware that Chiquita has a weekly obligation to plan and prepare a meal. This is multi-purpose. It makes her feel like she always gets at least one night a week what she really wants for dinner (ie some control), but also both cooking and balanced meal planning are good skills she will need in her adult life.
Many times her choices are pretty obvious. For example when we first started this project she had to be discouraged from making pasta with tomato sauce each time. But every now and then she surprises me. This week her meal is stuffed cabbage (which I make about once a year to please
salvbard, since they then freeze beautifully for the rest of the year). I still remember the first time she had them; she was really dubious as she is not generally a huge fan of cabbage. I don't remember her adoring them, but rather grudgingly admitting they were pretty good. Apparently they made an impression though, for her to use her weekly meal to have them. (I suspect the cabbage in stores for St. Patrick's day made her think of them.)
